"Fast" Ed Francis was an icon in the Digby, Nova Scotia area. He and his wife, Christina, worked side by side for years after they opened the first Ed's Take Out in 1967. Like most combat vets, Ed didn't speak much about his time in Korea, but his love of great seafood is where his personality was able to shine through and it wasn't long before Ed's was THE place to go for ocean fresh seafood. Christina operated her bakery right next door and between the two, they raised their family, along with anyone who stopped by, and became stalwarts of the area's communities.
Although Ed and Christina are now with the ancestors, Their grandson, Brendan Clarke, carries on the family legacy with the opening of Ed's Take Out "up the highway" in Kingston, Nova Scotia in 2024. It is the love for family, friends, down home cooking, fun - and just a bit of seafood - that he's sharing with this customer appreciation event.
